Easy Vegetable Fajita Taco's

I'm so excited to share this quick taco recipe with y'all! It can be adjusted to be as mild or as fiery as you want. It's hearty and loaded with flavours. The toppings are the cherry on top, so add something crunchy(cabbage salad), creamy(guacamole & sour cream) or spicy(salsa & peppers) or all of the above!

prep time - 10 minutes

cook time - 10 minutes

total time - 20 minutes


INGREDIENTS:


1 tsp olive oil

1 clove garlic minced

1 yellow onion thinly sliced

1 green bell pepper thinly sliced

1 red bell pepper thinly sliced

4-5 white button mashrooms thinly sliced

1 tsp fajita seasoning (find the recipe of fajita seasoning here)

1/2 tsp crushed black pepper

Salt to taste

WORKING THE MAGIC:


Heat oil in a cast iron skillet on high flame.


Add the vegetables and garlic and let cook for 5 minutes.


Add in the spices and stir.


Remove from the heat and set aside.

Once the fajita is ready, warm the tortillas in a large skillet over medium heat in batches, flipping to warm each side.


To assemble the tacos, spread a spoonful of fajita down the center of each tortilla. Finish the tacos with garnishes of your choice, and serve immediately.


RECOMMENDED GARNISHES

Sour cream

Salsa verde

Shredded red/green cabbage

Crumbled feta cheese

Chopped fresh cilantro leaves

Lime wedges
