Vegan Roasted Strawberry & White Chocolate Greek- Style Yogurt Parfait with a hint of Rose

This parfait is very refreshing and makes a fantastic party dessert with tangy roasted strawberry purée and greek style yogurt sweetened with white chocolate and floral freshness of rose.

Prep time - 20 minutes

Bake time - 30 minutes

INGREDIENTS:

FOR ROASTED STRAWBERRRY PURÉE:

  • 1 lb fresh strawberries, washed & roughly chopped

  • 4 tbsp choice of sweetener

  • 1 tsp vanilla extract

FOR WHITE CHOCOLATE-ROSE YOGURT:

  • 4 cups plant based greek style yogurt

  • 1 cup vegan white chocolate

  • 1/8 cup plant milk or coconut cream

  • 1 tbsp rose water

FOR TOPPINGS:

  • 2-3 Lotus Biscoff cookies or graham crackers

  • White chocolate morsels

  • Dried rose petals

  • Mint leaves

WORKING THE MAGIC:


FOR ROASTED STRAWBERRRY PURÉE:

  1. Preheat oven to 350F and toss strawberries with sugar and vanilla on a large baking sheet lined with parchment paper.

  2. Bake for 30 minutes, or until juicy.

  3. When cooled completely, transfer to a blender and blend to make purée.

FOR WHITE CHOCOLATE-ROSE YOGURT:

  1. Place the white chocolate and coconut cream in a microwave-safe bowl. Microwave for 10-15 seconds at a time. Stir after each interval. Continue to melt and stir until the white chocolate is smooth. Do not try to melt the white chocolate quicker otherwise it'll get burnt.

  2. When cooled, add rose water and yogurt to it and mix well and make a smooth mixture.

ASSEMBLING THE PARFAITS:

  1. Layer in a parfait glass or jar with a heaping scoop of prepared white chocolate-rose yogurt.

  2. Repeat for the remaining four jars.

  3. Add roasted strawberry purée to the same bowl of white chocolate-rose mixture and stir thoroughly.

  4. In each jar, add a layer of white chocolate rose yogurt mixed with strawberry purée on top.

  5. Top with crushed Biscoff cookies, white chocolate morsels and fresh mint leaves.

  6. Allow it to cool in the refrigerator for 30 minutes before serving.
