Betel Leaf & Rose Jam Ice Cream | Paan Gulkand Ice Cream

This betel leaf aka paan ice cream tastes so amazing, I am totally blown away by the taste of it. Ingredients used to make this delectable dessert are betel leaves (paan), rose jam (gulkand), fennel seeds, tutti frutti and some nuts.


Paan is an intoxicant, acts as an antiseptic, a digestive aid and a mouth freshener, especially to be enjoyed after a heavy meal. Relishing Betel Leaf chew after a great meal is a symbol of Indian hospitality and tradition. Be it a wedding function, a worship occasion, paan is the finale to any Indian menu.


This refreshing ice cream is a perfect combination of a mouth freshener and a dessert, the best of both worlds.😋

T I M E

prep time - 20 minutes

set time - 8 hours/overnight


INGREDIENTS:


2 cups heavy whipling cream

3/4 cup granulated sugar

3 tbsp paan(betel leaf) finely chopped

2 tbsp gulkand (rose jam)

2 dates chopped

1 tbsp tutti frutti

1 tsp fennel seeds

1 tbsp chopped nuts(pistachio, almonds, cashews)

1/4 cardamom powder

3 drops green food color


WORKING THE MAGIC:


In a large bowl, add heavy whipping cream and whisk it for a minute till stiff peaks appear.

Further add sugar & cardamom powder and continue to whisk.


Now add paan leaf, gulkand, dates, tutty fruity, fennel seeds, chopped nuts and green food color.


Mix well making sure everything is combined well.

Transfer the mixture to a loaf pan, cover with cling wrap and freeze for at least 6 hours or overnight.
