This simple triple berry granola is created with only 12 ingredients and takes only around 5 minutes to prepare! It's vegan and gluten-free, making it ideal for a lighter dessert or even brunch.

INGREDIENTS:
2 cups rolled oats
1/2 cup mixed nuts (cashews, almonds, and pistachios)
4 tbsp flaxseed meal
3 tbsp hemp seed
2 tbsp chia seeds
4 tbsp tahini
1/4 cup maple syrup
2 tbsp melted coconut oil
1 tsp vanilla extract
1/8 tsp salt
1/4 cup coconut flaks
1/4 cup mixed freeze-dried strawberry, raspberry and goji berry
1/2 tsp cardamom powder
WORKING THE MAGIC:
Preheat oven to 300F. Line a baking sheet with parchment paper.
Combine rolled oats, mixed nuts, flaxseed meal, hemp seed and chia seeds in a medium-size mixing bowl. Add tahini and maple syrup.
Add melted coconut oil, vanilla extract and salt and Mix until well coated.
Spread granola, in a single layer, on a lined baking sheet.
Place in oven and bake for 35-40 minutes, stirring the mixture every 10 minutes to ensure even cooking.
Once done, remove from oven and let cool, granola will get crunchy as it cools.
Add in coconut flakes, freeze-dried berries, goji berries and cardamom powder and mix well.
Store in a covered container on the counter for up to 1 month.
