Vegan Luxe Triple Berry Coconut Cardamom Tahini Granola

This simple triple berry granola is created with only 12 ingredients and takes only around 5 minutes to prepare! It's vegan and gluten-free, making it ideal for a lighter dessert or even brunch.

total time - 45-50 minutes

INGREDIENTS:

  • 2 cups rolled oats

  • 1/2 cup mixed nuts (cashews, almonds, and pistachios)

  • 4 tbsp flaxseed meal

  • 3 tbsp hemp seed

  • 2 tbsp chia seeds

  • 4 tbsp tahini

  • 1/4 cup maple syrup

  • 2 tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 1/8 tsp salt

  • 1/4 cup coconut flaks

  • 1/4 cup mixed freeze-dried strawberry, raspberry and goji berry

  • 1/2 tsp cardamom powder

WORKING THE MAGIC:

  1. Preheat oven to 300F. Line a baking sheet with parchment paper.

  2. Combine rolled oats, mixed nuts, flaxseed meal, hemp seed and chia seeds in a medium-size mixing bowl. Add tahini and maple syrup.

  3. Add melted coconut oil, vanilla extract and salt and Mix until well coated.

  4. Spread granola, in a single layer, on a lined baking sheet.

  5. Place in oven and bake for 35-40 minutes, stirring the mixture every 10 minutes to ensure even cooking.

  6. Once done, remove from oven and let cool, granola will get crunchy as it cools.

  7. Add in coconut flakes, freeze-dried berries, goji berries and cardamom powder and mix well.

  8. Store in a covered container on the counter for up to 1 month.
