Crispy Yuca & Potato Patties with Roasted Red Pepper & Sun-dried Tomato Sauce | Airfried

Crispy on the outside and soft on the inside, these patties make for a fun and easy appetizer & our new favorite way to eat yuca. The roasted red pepper & sun-dried tomato sauce packed with tangy & nutty flavors truly shines next to the crispy patties with its lovely red hue and juicy appearance.

INGREDIENTS:

FOR THE SAUCE:

  • 1/4 cup roasted red peppers

  • 4 sun-dried tomatoes from a jar packed in olive oil

  • 1 tbsp olive oil

  • 1 tbsp tomato paste

  • 4 tbsp toasted walnuts

  • 1 tsp garlic powder

  • 1/2 tsp cayenne pepper

  • 1 tsp nutritional yeast

  • 1 tsp lemon juice

  • 1/2 tsp salt

FOR THE PATTIES:

  • 1 medium sized fresh yuca, peeled & cut into 3-inch rounds

  • 2 medium sized potatoes, boiled & mashed

  • 1 tbsp coriander seeds

  • 1 tbsp cumin seeds

  • 1 tbsp fennel seeds

  • 1 tsp dried rosemary

  • 1 tbsp hemp seeds

  • 1 tbsp onion powder

  • 1 tsp garlic powder

  • 2 tbsp fresh parsley, finally chopped

  • 1 tbsp black pepper

  • Salt to taste

WORKING THE MAGIC:

FOR THE SAUCE:

  1. Blend all the sauce ingredients together in a blender or food processor until smooth.


FOR THE PATTIES:

  1. In a large saucepan bring to a boil over medium-high; place yuca rounds in to the pan & reduce heat to medium and simmer until yuca splits open and is soft throughout, 20-25 minutes, depending on thickness of yuca.

  2. Add the coriander seeds, cumin seeds & fennel seeds to the hot and dry pan and toast for a couple of minutes. Again they are ready when they are distinctly fragrant and they might also start making a popping sound and movement. Remove from the heat and pour into the bowl of a mortar and pestle along with dried rosemary. Once they have cooled slightly use the pestle to grind the spices as fine as you can. No worries if it isn’t a perfect powder though.

  3. Once Yuca is cooled down, mash using a potato masher/ricer & combine with mashed potatoes, sautéed & grinder seeds mix, hemp seeds, onion powder, garlic powder, chopped parsley, salt & pepper in a large bowl & mix well.

  4. Scoop up 1/4 cup of the mixture, shape into balls and flatten into patties.

  5. Air-fry on 390F for 10 minutes, flip over and cook for additional 5 minutes.

  6. Serve hot with the sauce.
