Bagel with a Vegan Dill Veggie Cream Cheese Smear

This dairy-free dill & veggie cream cheese spread is creamy and tangy, with fresh herbs & veggies throughout. It's great on bagels or toast, as a spread in sandwiches or wraps, or as a dip with crackers or raw vegetables.

T I M E

Prep time - 10 minutes

Cook time - 30 minutes

Total time - 40 minutes

INGREDIENTS:

  • 4 ounces Vegan cream cheese (I used kite hill's)

  • 2 cup finely chopped roasted red bell pepper

  • 2 tablespoons finely chopped carrot

  • 4 tbsp chopped dill

  • 1 tbsp finely chopped chives or spring onions

  • 1 tbsp finely chopped parsley

  • Salt & pepper to taste

WORKING THE MAGIC:

  1. In a food processor, blend cream cheese until you get a creamy consistency.

  2. Add remaining ingredients and pulse a few times until well blended.

  3. Enjoy with toasted bagels or crackers.

  4. Store in an airtight container in refrigerator for up to 3 days.
