These aren't your typical brownies. These delicious treats are packed with veggies. Yes!! You heard it right! These are loaded with beetroot and zucchini. Beets adds a dense, moist texture to these easy brownies and if you’ve never added zucchini to your baked goods drop everything you are doing and do it now! These Veggie packed Brownies are unbelievably moist and rich. A chocolate lovers dream! And no one will know they have veggies inside.

INGREDIENTS:
FOR BROWNIES
2 beetroots
1/2 zucchini
1 cup light brown granulated sugar
1/2 cup olive oil
1 tbsp vanilla extract
1/2 cup chocolate chips
1/4 cup milk
1/4 cup cocoa powder
2 cups whole wheat flour
1/2 tsp baking soda
1/8 tsp salt
FOR CREAM CHEESE FROSTING
1 cup cream cheese cold
2 tbsp unsalted butter soften
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 cup hazelnuts or walnuts
WORKING THE MAGIC:
FOR CREAM CHEESE FROSTING
In a large mixing bowl, beat cream cheese & butter with an electric mixer or whisk. Now, add powdered sugar and vanilla extract & make a soft frosting. Put it in the refrigerator to chill, till the brownies gets ready.
FOR BROWNIES
Preheat oven to 350F/180C and grease a 9×9 baking dish with oil or butter & set aside.
In a food processor, make a puree of zucchini and boiled beets.
Take out the puree in a large mixing bowl. Add sugar, vanilla extract and olive oil to the puree and stir well.
In a separate mixing bowl, add chocolate chips and hot milk and mix well till chocolate melts, add it to the puree mix.
Sift cocoa powder, whole wheat flour, salt & baking soda to the puree to make thick consistency batter.
Pour brownie batter in the greased pan & bake for 30 minutes.
After 30 minutes, take out the pan from the oven and let it cool completely.
After an hour or so, when it's cooled completely, spread prepared cream cheese frosting evenly over the brownies.
Sprinkle with chopped hazelnuts and cut into squares.
NOTE: You can totally skip the frosting and it will still taste delicious.
