This luscious Vegan Lemon Loaf Cake is perfect winter dessert! Every bite of this loaf is fluffy, zesty, and so simple to create from scratch! Every piece of this delightfully delicious loaf cake is brimming with fresh lemon flavor, and the simple lemon glaze on top will have you hooked after just one mouthful.

INGREDIENTS:
1 cup plant based milk
1/2 cup lemon juice
1/2 cup melted vegan butter
1/2 cup plant based yogurt
3/4 cup organic cane sugar
1/2 tsp vanilla extract
2 tbsp lemon zest
2 all purpose flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
For Lemon Glaze:
1 cup organic powdered sugar
4 tbsp lemon juice
1 tbsp coconut cream or plant milk
WORKING THE MAGIC:
Preheat the oven to 350F and Line a 9-inch loaf pan with parchment paper and oil it with cooking spray.
Combine plant milk and lemon juice in a measuring cup or bowl and set adise for 10 minutes on the counter until the milk curdled.
After the milk curdles, in the same bowl, whisk in the melted butter, yogurt, organic cane sugar, vanilla extract and lemon zest.
Sift in the flour, baking powder, baking soda and salt and combine until smooth and no lumps show but remember not to over mix the batter.
Pour the cake batter into the lined loaf pan.
Bake for 45-50 minutes, or until a pick inserted into the center of the loaf comes out clean.
Cool the cake on a cooling rack for 1-2 hours before glazing.
For Lemon Glaze:
Prepare the lemon glaze while the loaf is cooling.
Combine powdered sugar, lemon juice and coconut cream or milk in a small mixing bowl using a whisk. Glazing should be thick and shiny. Add 1-2 tbsp powdered sugar as needed to make the glaze thick.
Drizzle the lemon loaf with the lemon glaze.
Refrigerate the pound cake for at least an hour to allow the glaze to set.
Enjoy the cake right away or store in the refrigerator for up-to 5 days in airtight container.
