Instant Pot Gajar Halwa | Carrot Pudding

Gajar Halwa is a rich decadent Indian winter delicacy prepared with carrots, milk, sugar, and ghee! Traditionally, fresh grated carrots are simmered for many hours with full fat milk, sugar, ghee and aromatics.

The best part about this Instant Pot Gajar Ka Halwa recipe is that it just takes 30 minutes to make without sacrificing its classic flavor.

total time - 40 minutes

INGREDIENTS:

  • 4 tbsp ghee/clarified butter

  • 4 cups grated carrot

  • 6 cups whole milk

  • 1 cup sugar

  • 1/2 tsp freshly pounded green cardamom

  • pinch of saffron

  • 1 tbsp golden raisin, optional

  • 2 tbsp slivered almonds and pistachios, optional

WORKING THE MAGIC:

  1. Turn on the Instant Pot and select sauté on high and add ghee.

  2. When the ghee is hot, add the grated carrots and stir for 4-5 minutes.

  3. Close the lid and set the Instant Pot to Pressure Cook on high for 5 minutes. Quick release.

  4. Turn the instant pot back to sauté mode on high and add the sugar, cardamom, and saffron at this stage, keep stirring until most of the milk have evaporated (approx. 20 minutes). Stir often to prevent the halwa from sticking to the bottom of the saucepan. Please keep in mind that the halwa will continue to thicken as it cools.

  5. Add raisins, slivered almonds, and pistachios, if using.

  6. Serve the gajar halwa immediately.
