Vegan Pumpkin Pecan Streusel Snack Cake with White Chocolate Maple Glaze

This Fall inspired Vegan Pumpkin Snack Cake is so moist and flavorful. It hits the spot throughout the fall season, piled high with brown sugar cinnamon crumble topping and drizzled with flavor rich white chocolate maple glaze.

INGREDIENTS:
  • 3/4 cup oat milk

  • 1 tbsp apple cider vinegar

  • 1/2 cup coconut oil

  • 1 1/4 cup pumpkin purée

  • 1/2 cup coconut sugar

  • 2 cup all purpose flour

  • 2 tsp pumpkin spice

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • pinch of salt

Pecan Streusel Topping:

  • 1/4 cup roughly chopped Pecans

  • 1/4 cup oat flour

  • 1/4 cup almond flour

  • 2 tbsp rolled oats

  • 1/4 cup coconut sugar

  • 1/4 cup melted coconut oil

  • 2 tbsp cinnamon powder

  • 1 pinch salt

White Chocolate Maple Glaze: (Optional)

  • 1/4 cup melted white chocolate

  • 2 tbsp maple syrup

  • 2 tbsp coconut cream

WORKING THE MAGIC:
  1. Preheat oven to 350F. Lightly grease a square baking pan and line with parchment paper.

  2. In a large mixing bowl, combine the oat milk and apple cider vinegar and let aside for a few minutes to activate. Mix in the coconut oil, pumpkin purée and sugar. In a sifter, sift the flour, , pumpkin spice, baking soda, baking powder, and salt over the wet ingredients and stir with a whisk or spatula until just combined.

  3. Transfer the batter into the lined baking pan.

  4. To prepare the streusel: Mix chopped pecans, oat flour, almond flour, rolled oats, coconut sugar, melted coconut oil, cinnamon powder, and salt.

  5. Sprinkle the crumble on top.

  6. Bake the cake for 55-60 minutes, or until a skewer inserted into the center comes out clean. If the cake starts to brown too soon, cover it with an oven-safe sheet or aluminum foil.

  7. Allow the cake to rest in the cake tin for at least 5 minutes. Remove the cake from the pan and let it cool on counter for 10-15 minutes.

  8. To prepare the glaze: Whisk together melted white chocolate, maple syrup, and coconut cream. Mix everything well and pour over the pumpkin cake.

  9. Cut the cake in equal-sized squares and serve it warm.
