Crunchy Superfruit & Nut Spiced Granola | Granola Yogurt Bowl

This granola is perfection in a bowl or a big plate! Okay! ⠀

It is filled with rolled oats, superfruits, nuts, and seeds- full of plants, excluding whatever fresh fruit you include! It is wonderfully crunchy and sweet, yet not too sweet. This is going to be my breakfast every day now. Just add seasonal fruits and enjoy with coconut yogurt or any plant-based milk!! Aah!! FOOD HEAVEN!


This recipe is filled with tasty possibilities and can easily be customized. For the nuts, I used a mixture of raw almonds and walnuts, and for the additional mix-ins, I used a mix of seeds, goji berries dried cranberries. But feel free to use any blend of nuts, seeds, chocolate, and dried fruits that you’d like. ⠀

🍽 S E R V I N G S

T I M E

prep time - 10 minutes

cook time - 35-40 minutes

total time - 45-50 minutes

INGREDIENTS:

  • 2 cups rolled oats

  • 1/4 cup almonds

  • 1/4 cup pecans

  • 1/4 cup walnuts

  • 1/4 cup unsweetened shaved coconut

  • 1/4 cup goji berries

  • 1/4 cup dried cranberries

  • 1/3 cup raw sunflower seeds

  • 1/3 cup pepitas (pumpkin seeds)

  • 2 tbsp chia seeds

  • 2 tbsp hemp seeds

  • 1 tbsp cinnamon powder

  • 1 tbsp ginger powder

  • 1 tbsp cardamom powder

  • 1 tsp nutmeg powder

  • 1/4 cup melted coconut oil

  • 1 cup maple syrup


WORKING THE MAGIC:

  • Preheat oven to 250F. Line a baking sheet with parchment paper.

  • Combine all dry ingredients in a medium-size mixing bowl. Add maple syrup and melted coconut oil. Mix until well coated.

  • Spread granola, in a single layer, on a lined baking sheet.

  • Place in oven and bake for 35-40 minutes, stirring the mixture every 10 minutes to ensure even cooking.

  • Once done, remove from oven and let cool, granola will get crunchy as it cools.

  • Store in a covered container on the counter for up to 1 month.

To make the Granola Yogurt Breakfast Bowl

You will need:

  • 1/2 cup coconut yogurt sweetened with 1 tbsp maple syrup or any plant-based yogurt

  • 4-5 tbsp granola

  • 1/2 cup your choice of berries or seasonal fruits, washed and cut

Instructions:

  • Place the yogurt in a bowl.

  • Top with granola.

  • Add the washed fruit.

  • Serve and enjoy!
