Gluten-free Vegan Apple Thyme Snaps

These lightly sweet and crisp snaps are a great on-the-go snack for busy days. They're great to meal-prep ahead of time, and enjoy throughout the week, and are especially delicious enjoyed with a tea or coffee.

prep time - 10 minutes

bake time - 40-45 minutes

total time - 50-55 minutes

INGREDIENTS:

  • 1 1/2 cup bajra/peral millet flour

  • 1 cup grated apple

  • 1 tsp freshly grated ginger

  • 1/2 cup oil (I used avocado oil, you can use any oil)

  • 3 tbsp chopped fresh thyme/ 1 tsp dried thyme

  • 2 tbsp flaxseed meal

  • 1 tsp maple syrup

  • 1/2 tsp baking powder

  • 1 tsp black pepper

  • 1 tsp salt

  • Pinch of cinnamon powder

  • Pinch of clove powder

  • 4 tbsp everything bagel seasoning for sprinkling (or use mix of chia seeds, sesame seeds and black sesame seeds)

WORKING THE MAGIC:

  1. Preheat the oven to 300°F.

  2. Peel, de-core and roughly cut the apples.Grate the apples and wrap the shredded apple in a cheese-cloth or a clean kitchen towel and, squeeze out as much apple juice as possible.

  3. In a large mixing bowl, mix together the all the ingredients except everything bagel together to make a smooth dough. Knead for about 30-35 seconds, or until the dough looks consistent and feels pliable in your hands.

  4. Divide the dough in half and, on a piece of parchment paper, flatten each piece into a small rectangle.

  5. Using a rolling pin, roll each piece of dough to about 1/16" thick. The dough will have misshapen edges; that's part of its charm! Using a knife or pizza cutter, cut the dough into 1 ½" squares.

  6. Transfer the dough and parchment together onto a baking sheet. Lightly brush the tops of the snaps with oil & sprinkle generously with everything bagel seasoning.

  7. Bake for 40 to 45 minutes, rotating the pans halfway through, or until the squares are starting to brown around the edges.

  8. Cool completely, then store in an airtight container at room temperature for up-to two weeks.
