Falafel is like a muscle memory-food for my tastebuds. I have eaten different versions of falafels in various restaurants, and this recipe comes very close to my favorite one. Crispy on the outside, light on the inside, packed with fresh herbs. Serve inside the fluffy pita bread or over the bed of hot turmeric rice and lots of salad or enjoy as a snack with hummus.

INGREDIENTS:
1 cup dried chickpeas
1/4 cup onion
1/2 cup parsley
1/2 cup cilantro
2-3 garlic cloves
1/2 tsp cumin powder
1/4 tsp cayenne pepper
1 tsp salt
1/4 tsp cardamom powder
1 tsp sesame seeds
1/4 tsp black pepper
2 tbsp chickpea flour
1/4 tsp baking soda
Oil for frying
WORKING THE MAGIC:
Soak the dried chickpeas in water, the night before.
Drain and rinse the chickpeas and add them to food processor with all the ingredients except chickpea flour & baking soda. Pulse several times until it resembles the texture of coarse sand.
Transfer the mixture to a bowl and add chickpea flour and baking soda. Stir together, then cover & refrigerate for 30 minutes.
Now make small balls of the mixture & deep fry falafels in medium hot oil until golden brown. Then remove them to a paper towel-lined plate.
Serve the falafel immediately, while warm and crispy.
