Pav Bhaji is a popular Indian street food, devoured by all with so much enthusiasm. Pav aka soft dinner rolls and Bhaji is a thick vegetable curry in tomato gravy mixed with cooked vegetables. It’s a great way of including vegetables in your diet. Here I am sharing my healthy version of bhaji made with olive oil.

INGREDIENTS:
1 green bell pepper (roughly chopped)
2 carrots (roughly chopped)
2 tomatoes (roughly chopped)
1 cup cauliflower (roughly chopped)
2 potatoes (roughly chopped)
1 cup green peas
2 medium sized onions (finely chopped)
3-4 garlic cloves (minced)
1 green chilli (finely chopped)
2 tbsp pav bhaji masala
1 tsp kashmiri red chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp dried fenugreek leaves (kasuri methi)
2 tbsp olive oil
1 tbsp butter
Salt to taste
Water as required
WORKING THE MAGIC:
Boil carrots, potatoes, peas, tomatoes, green pepper and cauliflower with salt and little water in a pressure cooker. Mash the veggie mixture with potato masher and keep aside.
Heat oil in a pan, add minced garlic and green chillies, coriander powder and kashmiri red chilli powder.
Add chopped onions along with 1 tbsp pav bhaji masala, turmeric and dried fenugreek leaves and cook for 2 minutes.
Further, add mashed veggies and 1tbsp of pav bhaji masala and cook.
Adjust salt and butter. Let it simmer for 5 minutes.
Garnish with finely chopped cilantro/coriander and serve with hot butter roasted pav!!
