Vegan Mango Coconut Fudge like Burfi Bars

Mangoes are very versatile, and I love how they can be used in almost any dish to elevate the flavors. These fudgy Mango Coconut Burfis are made with mango puree, coconut flour and coconut condensed milk that is highly addicting and delicious. These fudge like Burfis are sheer delight, and you can't stop yourself from grabbing a couple at a time.

30-32 Burfi Bars


T I M E

prep time - 5 minutes

cook time - 20-25 minutes

total time - 35-30 minutes

INGREDIENTS:
  • 4 tbsp coconut oil

  • 1 1/2 cup coconut milk powder

  • 1 tin coconut condensed milk

  • 2 cups mango purée

  • 1/4 cup plant-milk

  • 1/2 cup almond flour

  • 1.5 cups coconut flour

  • 1/2 tsp. cardamom powder

  • 8-10 strands saffron

  • Gold/Silver Leaf, optional

  • Handful of pistachio slivers for garnish, optional

  • 1 tbsp Dried rose petals for garnish, optional


WORKING THE MAGIC:
  1. Heat coconut oil in a heavy-bottomed non-stick pan.

  2. Add coconut flour and roast for 3-4 minutes on a low heat without browning.

  3. Mix in the coconut condensed milk.

  4. If it's too thick, add a little plant-milk.

  5. Cook for a few minutes, then add coconut milk powder.

  6. Continue to whisk and cook until the mixture thickens.

  7. Now, add the mango purée and thoroughly mix it up.

  8. Continue to whisk the mixture over medium heat, making sure it doesn't cling to the bottom.

  9. It will take roughly 25-30 minutes.

  10. Turn off the heat when the mixture thickens and separates oil.

  11. Mix in the saffron and cardamom powder.

  12. Transfer the mixture on a baking sheet lined with parchment paper.

  13. Using the back of a spoon, flatten the top. Make the surface as even as possible. If a flat surface is desired, gently lubricate the spoon with oil. If you aren't using gold/silver leaf, a small handful of slivered pistachios and dried rose petals can be pressed into the surface of the burfi at this point.

  14. Allow to set for 3-4 hours at room temperature.

  15. Cut the burfi into pieces with a big, sharp knife.

Note: Burfi's store well in an airtight container in refrigerator for uptown 1 week.
