You'll love these maple glazed rainbow carrots because they can be thrown onto one pan, cooked for 25 minutes, and they're done! This makes a great side dish or you can enjoy it as a dessert too. Carrot haters, don’t knock it till you try it!

INGREDIENTS:
1 lb rainbow carrots
2 tbsp coconut oil
1 tsp maple syrup
1/4 tsp sea salt
1/4 tsp cayenne pepper
🌱 FOR MAPLE ALMOND BUTTER SAUCE
4 tbsp smooth almond butter
2 tbsp maple syrup
1 tsp coconut oil
1 tsp lemon juice
1 pinch sea salt
dash of ginger powder
🌱 FOR GARNISHING
1 tbsp chopped rainbow tops
1 tbsp coconut flakes
1 tbsp pepitas
1 tsp hemp seeds
WORKING THE MAGIC:
Preheat oven to 400F and line a baking sheet with parchment paper and set aside.
Meanwhile, mix together coconut oil, maple syrup, sea salt, and cayenne pepper and toss in the carrots until well coated.
Place carrots on to the sheet and roast for 25 minutes.
To make maple almond butter sauce, combine almond butter, maple syrup, coconut oil, lemon juice, sea salt, and ginger powder until well combined.
Drizzle it over the roasted carrots.
Garnish with chopped carrot tops, coconut flakes, pepitas, and hemp seeds.
