Sweet Potato Halva Parfait with Saffron Mascarpone Cream

These parfaits are sure to delight your guests. An ideal dessert for the Diwali party or be it Thanksgiving.

A delicately flavored, lightly sweetened dish with melt-in-mouth textures and aromatics from cardamom and saffron. Sweet potato halva is a healthy dessert and is a great option to satisfy your sweet tooth with no guilt.

INGREDIENTS:


🌱 FOR HALVA

  • 3 tbsp ghee (or use an equal amount of coconut oil to keep it vegan)

  • 2 medium-size sweet potatoes

  • 1 can coconut milk

  • 4 tbsp coconut sugar

  • 1 tsp cardamom, freshly pounded cardamom works best here

  • 8-10 saffron strands

  • 3-4 tbsp chopped nuts(almonds, cashews, pistachios) and more for garnishing


🌱 FOR MASCARPONE CREAM

  • 1/2 cup mascarpone cheese

  • 4 tbsp heavy cream

  • 4-5 saffron strand

  • 1 pinch cardamom powder

  • 1 pinch nutmeg


WORKING THE MAGIC:

🌱 FOR HALVA

  • Peel and roughly chop the sweet potatoes.

  • Put the sweet potatoes and shred it in a food processor fitted with a shredding attachment.

  • In a heavy bottom pan, melt ghee. Once heated, add shredded sweet potatoes into it and saute for 4-5 minutes.

  • Pour in coconut milk and saffron to it and mix well together.

  • Cook the mixture on low heat for about 25-30 minutes stirring often, so that milk doesn't stick to the bottom of the pan. The milk will start to reduce slowly at this stage.

  • Add coconut sugar to it and continue to simmer on low heat until the halva mixture starts to thicken and milk reduces completely. Keep stirring frequently at this stage to avoid burning.

  • Add in cardamom powder and chopped nuts.

  • Remove from heat.

  • You can serve this halva as is or if you want to impress your guests with a fancy dessert, make a parfait with mascarpone cream.


🌱 FOR MASCARPONE CREAM (avoid this step to keep it vegan)

  • To make the mascarpone cream, mix mascarpone cheese and heavy cream in a bowl and whisk well.

  • Add saffron, cardamom powder, and nutmeg to it and mix well.


🌱 ASSEMBLE

  • Just before serving, layer 4-5 spoon of halva into the bottom of 2 cups, alternate the layers of mascarpone cream then chopped nuts.

  • Repeat layers until glasses are filled to the top.

  • Enjoy warm.
