Trader Joe's Chili lime, Herb & Cheddar Bites | VEGAN Savory Cookies

These flaky, cheesy, and buttery bites bursting with flavors of aromatic herbs with a subtle hint of chili & lime. Soft and crispy at the same time, a uniquely delicious savory cookie that is easy to make and store well. It’s a perfect option to use on your cheese board, or even as an edible gift! The dough can be made ahead of time and frozen for later. This recipe is one of my favorite ways to use Trader Joe’s Chili Lime Seasoning.

40-42 mini cookie bites

T I M E

prep time - 10 minutes

chilling time - 2 hours

baking time - 15-20 minutes


INGREDIENTS:

  • 8 oz Vegan Cheddar cheese (I used Miyoko's Cultured Vegan Cheddar Shreds)

  • 1/2 cup vegan butter, softened at room temperature

  • 1 1/4 cup all-purpose flour

  • 2 tbsp nutritional yeast (for extra cheesiness)

  • 2 tbsp Trader Joe’s chili lime seasoning

  • 1 tbsp onion powder

  • 4 tbsp mixed herbs(oregano, rosemary, chives, sage & thyme), fresh or dried

  • 1 tbsp paprika

  • 1/2 tsp freshly cracked black pepper

  • 1/2 tsp sea salt


WORKING THE MAGIC:

  • Combine shredded cheddar cheese, vegan butter, flour, nutritional yeast, chili lime seasoning, onion powder, mixed herbs, paprika, salt, and pepper in a bowl.

  • Bring the dough together to form a dough ball. If needed, Knead it a little to bring it together. But don't knead too much.

  • Form an evenly shaped dough log that's about 10 inches long for mini bites. Wrap it in plastic wrap. Knot the two ends to form a tightly wrapped dough log. Refrigerate at least 2 hours or overnight.

  • Preheat oven to 350°F.

  • With the help of a sharp knife, cut ¼ inch thick discs from the chilled dough log. Use your fingers to shape the cookies into a nice round if they lose their shape a bit. Place the sliced cookies on a parchment paper-lined baking tray and bake for 15-20 minutes for flakey crispy cookie bites.

  • Let the cookies cool completely before enjoying them. They store well at room temperature for up to a week.
