Winter has officially arrived here in Minnesota and also it's weather to enjoy a hot cup of homemade hot chocolate. A creamy dreamy totally vegan hot chocolate with a kick of ancho chili and lots of vegan marshmallows is essential to keep you warm this winter. The best part: it whips up in about five minutes!!

INGREDIENTS:
2 cups non-dairy milk of your choice (I used oatly's full-fat oat milk)
1/4 cup vegan dark chocolate, roughly chopped
2 tbsp maple syrup
1/8 tsp ancho chili powder
1/2 tsp cinnamon powder
1 pinch nutmeg
1 pinch salt
Vegan marshmallows, optional
Cocoa powder for dusting
WORKING THE MAGIC:
Bring milk to a simmer in a medium saucepan over medium-high heat.
Mix in maple syrup, ancho chili powder, cinnamon, nutmeg, and salt.
Whisk frequently, until mixture is smooth and creamy and chocolate is completely melted.
Divide hot chocolate among 2 mugs.
Top with vegan marshmallows and dust cocoa powder before serving.
