This healthy cake made with olive oil, brown sugar and whole wheat flour. There’s orange in every bite of this from scratch loaf cake.
The cake is filled with orange zest and juice, drenched with an orange simple syrup before the frosting goes on and frosting is orange powdered sugar glaze.

INGREDIENTS:
1 ½ cup whole wheat flour
1 tbsp corn flour
½ cup granulated light brown sugar
½ cup olive oil
1 ½ cup fresh orange juice
1 tsp orange zest
2 tsp black poppy seeds
1 tsp baking powder
½ tsp baking soda
2-3 pinches dry ginger powder
1 pinch salt
For orange syrup:
1/2 cup fresh orange juice
2 tbsp brown sugar
For orange glaze:
1 cup confectioners sugar
1 tbsp fresh orange juice
1/4 tsp orange zest
WORKING THE MAGIC:
In a large mixing bowl, add oil and sugar and beat the mixture till it gets creamy and smooth.
Add fresh orange juice and mix well, then add flour, cornflour, orange zest, poppy seeds, salt, dry ginger powder, baking soda and baking powder and mix well to make a smooth batter.
Pour the batter in lined/greased cake pan.
Bake the cake in preheated oven at 350F/180C for about 35-40 minutes or until a skewer inserted in the center of the loaf comes out with a few moist crumbs.
For syrup: Meanwhile, as the cake bake, prepare the orange syrup; In a small saucepan cook the orange juice with sugar over low heat until sugar dissolves.
When the cakes come out of the oven, generously brush the top with the syrup.
Allow the cake to cool in their pan for 10 minutes, glazing the top a few more times while it cool in pans. Remove the cake from the pan and set it on a cooling rack.
Brush the sides and top of the cake with the remaining syrup.
Cool the cake completely.
For glaze:
Make the glaze by adding the powdered sugar and orange juice to a medium bowl using a whisk. It should be of pour-able consistency. Let the cake sit out until the glaze has dried well. Wrap the loaf and store in the refrigerator.
