Whipped Lemon Ricotta Dip with Herby Cherry Tomatoes & Garlic Confit

Here’s a simple and flavour-packed appetizer that’s sure to be a hit– Super smooth and creamy Whipped Lemon Ricotta Dip topped with Sweet Tomatoes & Garlic Confit with Herbs! This dip has a beautiful taste of lemon and herbs and is perfect served with some toasted baguette bread with olive oil! It’s low-key and a true crowd-pleaser.

INGREDIENTS:

FOR TOMATO & GARLIC CONFIT:

  • 1 pint fresh cherry tomatoes

  • 1 head garlic (sliced in half)

  • 1 cup EVOO

  • Handful of fresh herbs (such as basil, thyme, oregano, rosemary)

  • 1 tsp flakey sea salt

  • 1/4 tsp black pepper

FOR WHIPPED LEMON RICOTTA DIP:

  • 2 cups fresh ricotta

  • 1 tbsp lemon zest

  • 1 tbsp lemon juice

  • 1 tsp onion powder

  • 2 tbsp maple syrup

  • 1/2 tsp flakey sea salt

  • 1/4 tsp black pepper


WORKING THE MAGIC:

FOR TOMATO & GARLIC CONFIT:

  1. Preheat oven to 400 F. Place tomatoes in a large baking dish with deep sides. Add heads of garlic, cut side up. Just nestle them in there.

  2. Cover with olive oil, making sure to almost reach the tops of the tomatoes.

  3. Sprinkle with flaky sea salt and black pepper, then top with fresh herbs. No need to push herbs down into olive oil, they can rest on top.

  4. Roast for 45 minutes, or until the garlic looks tender, and the tomatoes have browned and begun to burst on top. Allow to cool slightly. Squeeze the garlic cloves gently out of the peel and into the tomatoes and oil, discarding the skin.

FOR WHIPPED LEMON RICOTTA DIP:

  1. In a food processor, combine the ricotta, lemon zest, lemon juice, maple syrup, onion powder, salt, and pepper. Blitz until smooth.

  2. Make a tiny well in the center of the ricotta dip on a serving plate or shallow dish. Add the tomato-garlic confit, drizzle with olive oil, and season with flaky sea salt to taste.

  3. Serve with crusty toasted baguette.
