Crunchy Munchy Quick Evening Snack. Protein Rich, Gluten-free, Vegan and low in Calories. The Homemade Quick Snack that Some of us might have grown up eating, the one that is basic and best but with a Middle Eastern twist- Za'atar Spice. Za'atar is a flavorful Middle Eastern spice blend of savory dried herbs like oregano, thyme, and toasted earthy spices like cumin and coriander, with sesame seeds, sumac and salt.

total time - 10 minutes

INGREDIENTS:
2 cups foxnuts or Phool makhana (You can buy foxnuts from Indian grocery store or from amazon)
2 tbsp coconut oil divided
2 tbsp za’atar spice
Salt to taste
WORKING THE MAGIC:
Heat 1 tbsp of coconut oil in a wide pan and add lotus seeds. Roast the seeds in low flame until aromatic and crunchy. It will take 7 to 10 minutes for them to completely roast.
Remove the roasted lotus seeds in a plate and in the same pan, heat the remaining 1 tbsp of coconut oil.
Add the za’atar spice to the oil and add the roasted seeds to the pan.
Toss well to combine for a few seconds.
Turn off the flame and let it cool completely.
Store in an airtight container on the counter for up to a month.
