Za'atar Tofu Vegan Nourish Bowl

Fragrant, Moroccan spices meet easy cuisine in this divine Za’atar Tofu Vegan Nourish Bowl recipe! Baked za'atar spiced tofu mingle with fresh, Mediterranean-style veggies on a bed of garlicky pearled couscous, for a delicious salad that’s easy to whip up and absolute perfect option for a light lunch, or for dinner. This vegan nourish bowl comes together in under 30 minutes and will quickly become a flavorful addition to any successful meal, every time!

INGREDIENTS


🌱 FOR TOFU

1 Block extra firm tofu, drained, pressed and cut into cubes

3 tbsp za’atar seasoning

2 tbsp extra virgin olive oil

1/2 tsp sea salt


🌱 FOR COUSCOUS

1 cup pearled couscous

1 tbsp extra virgin olive oil

1/2 tsp salt

1/2 tsp garlic powder

1/2 tbsp mixed dried herbs (rosemary, thyme, sage, oegano and parsley)

1 3/4 cup water


🌱 FOR ASSEMBLING

2 English cucumbers, cut into thin slices

1 cup red cabbage, shredded

1 cup broccoli florets, steamed

1/2 cup roasted red pepper, diced

1/4 cup black olives, cut into rings

Juice of 1/2 lemon


WORKING THE MAGIC:


🌱 FOR TOFU

Preheat oven to 375F and line a baking sheet with parchment paper.

Place tofu cubes in a bowl, drizzle olive oil and toss & coat the tofu.

Sprinkle za’atar seasoning and coat each cube nicely.

Place all the tofu on a lined baking sheet.

Bake for 15-20 minutes, until tofu is all brown and a bit crispy. While the tofu is baking , prepare pearled couscous.


🌱 FOR COUSCOUS

In medium sized pot, combine 1-3/4 cups water, 1 tbsp olive oil and Pearled Couscous.

Bring to a boil. Reduce heat to a medium boil. Simmer at a medium boil for 8 minutes uncovered, Stir occasionally.

Add salt, garlic powder and mixed dried herbs and stir thoroughly.

Bring back to a medium boil and simmer for 4-6 minutes or until couscous is tender.

Let stand covered 5 minutes before serving.


🌱 FOR ASSEMBLING

Divide the za'atar tofu, pearled couscous, cucumbers, shredded red cabbage, steamed broccoli, roasted red peppers and olives between two bowls. Drizzle each bowl with lemon juice and serve.
