Apple Streusel Cake | Vegan

This vegan apple streusel cake will be your new favorite go-to apple recipe. With chunks of apples and a generous amount of cinnamon, this cake is the best thing with coffee in the morning. ⁣It's soft, moist, topped with crunchy streusel topping, and super simple yet insanely delicious. Trust me, a warm slice of this cake takes all the worry away.

INGREDIENTS:

  • 3 apples, peeled & chopped

  • 2 cups all purpose flour or spelt flour

  • 1/2 cup coconut sugar

  • 2 tsp cinnamon powder

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup oat milk or any plant-based milk

  • 1/4 cup coconut oil

  • 1/4 cup apple sauce

  • 1 tbsp apple cider vinegar

  • 1 tsp vanilla extract

Streusel Topping:

  • 1/4 cup oat flour

  • 1/4 cup almond flour

  • 2 tbsp rolled oats

  • 1/4 cup coconut sugar

  • 1/4 cup melted coconut oil

  • 1 tbsp cinnamon powder

  • 1 pinch salt


WORKING THE MAGIC:

  • Preheat oven to 350F. Lightly grease a square baking pan and line with parchment paper.

  • In a large mixing bowl, whisk together all the dry ingredients and set aside.

  • In a separate bowl, whisk together all the wet ingredients and pour the mixture into the dry flour mixture and stir with a whisk or spatula until just combined.

  • Transfer the batter into the lined baking pan. Spread the peeled and chopped apple on top and gently press them into the dough.

  • To make the streusel, mix oat flour, almond flour, rolled oats, coconut sugar, melted coconut oil, cinnamon powder, and salt & crumble it over the cake.

  • Bake the cake in a preheated oven for 40-45 minutes or until a skewer inserted in the center of the cake comes out clean.

  • Allow to cool for a few minutes in the pan and then cut it while warm and enjoy!
