This vegan apple streusel cake will be your new favorite go-to apple recipe. With chunks of apples and a generous amount of cinnamon, this cake is the best thing with coffee in the morning. It's soft, moist, topped with crunchy streusel topping, and super simple yet insanely delicious. Trust me, a warm slice of this cake takes all the worry away.

INGREDIENTS:
3 apples, peeled & chopped
2 cups all purpose flour or spelt flour
1/2 cup coconut sugar
2 tsp cinnamon powder
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup oat milk or any plant-based milk
1/4 cup coconut oil
1/4 cup apple sauce
1 tbsp apple cider vinegar
1 tsp vanilla extract
Streusel Topping:
1/4 cup oat flour
1/4 cup almond flour
2 tbsp rolled oats
1/4 cup coconut sugar
1/4 cup melted coconut oil
1 tbsp cinnamon powder
1 pinch salt
WORKING THE MAGIC:
Preheat oven to 350F. Lightly grease a square baking pan and line with parchment paper.
In a large mixing bowl, whisk together all the dry ingredients and set aside.
In a separate bowl, whisk together all the wet ingredients and pour the mixture into the dry flour mixture and stir with a whisk or spatula until just combined.
Transfer the batter into the lined baking pan. Spread the peeled and chopped apple on top and gently press them into the dough.
To make the streusel, mix oat flour, almond flour, rolled oats, coconut sugar, melted coconut oil, cinnamon powder, and salt & crumble it over the cake.
Bake the cake in a preheated oven for 40-45 minutes or until a skewer inserted in the center of the cake comes out clean.
Allow to cool for a few minutes in the pan and then cut it while warm and enjoy!
