Bhel Puri is a mouth-watering Indian street food that falls into the chaat category.
Bhel means 'everything mixed together' and this easy to follow Bhel Puri chaat is loaded with veggies and primarily made with puffed rice to which many delectable tidbits are added. It is a great meal or snack!
You can even serve it up in a martini glass or champagne flute, to create a Bhel'tini or Bhel'lini. The perfect party appetizer!!

INGREDIENTS:
🌱FOR BHELPURI
2 cups puffed rice
1 cup bombay mixture
1 cup finely chopped onions
1/2 cup finely chopped tomatoes
1/2 cup finely chopped cucumber
1/2 cup roasted peanuts
1/4 cup chopped cilantro leaves
7-8 papdis, crushed
1 tsp chaat masala
A handful of nylon sev
2 tbsp mint cilantro chutney
4-5 tbsp tamarind date chutney
1/4 cup pomegranate seeds
2 tbsp lemon juice
Salt to taste
🌱GREEN CHUTNEY 1 cup cilantro leaves
1 cup mint leaves
1 tsp chopped ginger
1 green chili
1/4 cup peanuts, roasted and skin removed
1/4 tsp cumin seeds
2 tbsp lemon juice
1 tsp sugar
Salt to taste
Water as needed
🌱TAMARIND DATE CHUTNEY
1/2 cup tamarind paste
1/4 cup dates, deseeded
2 cups water
1/2 tsp red chili powder
1/2 tsp cumin powder
1/2 tsp ginger powder
1/2 tsp coriander powder
3/4 cup jaggery powder
1 tsp salt
Water as needed
INSTRUCTIONS:
🌱GREEN CHUTNEY
Blend all the ingredients in a blender until smooth. If the chutney feels too dry, add a few drops of water to it and it is ready.
🌱TAMARIND DATE CHUTNEY
Soak dates in a one cup of warm water for about 2 hours. When dates become soft, make a smooth paste in a blender. Strain and transfer to a pan and add the tamarind paste, jaggery powder and seasoning. Boil the mixture till it becomes thick for about 8-10 minutes. Remove form heat and let it cool completely.
🌱FOR BHELPURI
To make bhel puri, place puffed rice, Bombay mixture, crushed papdis, roasted peanuts, nylon sev, onions, tomatoes, cucumber, cilantro, pomogranate seeds, chaat masala and red chili powder in a bowl. Drizzle with tamarind date chutney & green chutney. Mix everything well together. Season with salt. Garnish with extra chopped onions, chopped tomatoes, cilantro and sev.
Enjoy immediately before puffed rice gets soggy!
