Healthy Pumpkin Cream Cheese Muffins with Cardamom | Vegan Muffins

These are super moist & fluffy vegan pumpkin cream cheese muffins with a hint of cardamom. Dairy-free, egg-free and refined sugar free! Need I say more?? You can also add pecans or vegan chocolate chips to the batter if you'd like, but they are also perfect with just the pumpkin flavor and cream cheese topping with nuttiness of pumpkin seeds!

They're so quick and easy to make and perfect for grabbing on the go.

baking time - 20 minutes

total time - 30 minutes

INGREDIENTS:

  • 1+1/2 cup pure pumpkin puree

  • 1/4 cup coconut oil

  • 4 tbsp coconut sugar

  • 3/4 cup maple syrup

  • 2 flax eggs (2 tbsp flax seed powder mixed with 6 tbsp water)

  • 1+1/2 cups whole wheat flour

  • 1 tsp pumpkin spice

  • 1 tsp cardamom powder

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 2 tsp toasted pumpkin seeds, for garnish


FOR CREAM CHEESE TOPPING

  • 4oz vegan cream cheese, softened

  • 3 tbsp maple syrup

  • 1/2 tsp cardamom powder

  • 1 tbsp plant-based milk

WORKING THE MAGIC:

  • Preheat oven to 350F and prepare muffin baking trays with paper muffin cups to hold 12 muffins.

  • In a large bowl, sift and whisk together the whole wheat flour, sugar, baking powder, baking soda, salt, and pumpkin spice.

  • In a separate medium-sized bowl, whisk together the pumpkin puree, coconut oil, coconut sugar, maple syrup and flax eggs.

  • Mix flour mixture in to the wet ingredients slowly and stir with a large spoon until just combined and there are no dry pieces.

  • Fill muffin trays evenly with the batter.


FOR CREAM CHEESE TOPPING

  • In a medium-sized bowl, mix all the ingredients using a whisk until smooth.

  • Top each muffin with about 1 tablespoon of cream cheese mixture and swirl it into the batter using a toothpick.

  • Top each muffin with pumpkin seeds too, if desired.

  • Bake for 18-20 minutes until a toothpick inserted into the muffins comes out mostly clean.

  • Cool for 10 minutes and then take them out of the muffin tray and place on a wire rack to cool completely.

  • Enjoy with a hot coffee or even better with spiced hot chocolate.
