INGREDIENTS:
š± FOR PIE DOUGH
1 1/4Ā tspĀ active dry yeast
1/2Ā tspĀ granulated sugar
1/2Ā cupĀ warm water
1Ā tspĀ salt
2Ā tbspĀ olive oil
1 1/4Ā cupsĀ all-purpose flour
š± FOR TOPPING
1 cup gruyere cheese
6-7 cloves of garlic, minced
3 heirloom tomatoes, cut into thin slices
2 tbsp everything bagel seasoning
1 tbsp sumac
few fresh basil leaves
salt & pepper to taste
olive oil for drizzling
WORKING THE MAGIC:
Preheat oven to 450F. Lightly grease a baking sheet and set aside.
In a large bowl, mix together the yeast, sugar, and warm water and allow to sit for 10 minutes until foamy.
Stir the olive oil and salt into the yeast mixture. Then mix in the flour 1/2 cup at a time until the dough has started to pull away from the sides of the bowl.
If you are not using a stand mixer, place the dough onto a lightly floured surface and knead for 5 minutes until smooth.
Shape the dough into one ball and roll the dough out to 1/4 inch thickness on a lightly floured surface and transfer to a greased pan.
Drizzle with a tbsp of olive oil and spread minced garlic and freshly grated gruyere cheese on top and start layering the tomatoes until all the dough is covered.
Sprinkle salt and pepper and place the pizza pie in the oven for 15-20 minutes until the crust is golden brown and cheese is melted.
Remove the pie from the oven, drizzle with 2 tbsp of olive oil, everything bagel seasoning, sumac, and fresh basil leaves. Cut into slices and enjoy warm!
