These delicious vegan baked apple cider donuts are packed with warm spices like cinnamon, nutmeg, and cloves before being coated in cinnamon-cardamom sugar! Aah!! This is the stuff that dreams are made of!!

INGREDIENTS:
1/2 cup reduced apple cider
1/4 cup coconut sugar
4 tbsp apple sauce
4 tbsp olive oil
1 tsp vanilla extract
1+1/4 cup whole wheat pastry flour (you can substitute for equal amount of all purpose flour)
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon powder
1/4 tsp nutmeg powder
1/8 tsp clove powder
1/2 tsp salt
For Cinnamon Cardamom Sugar Topping:
2 tbsp coconut oil for brushing the donuts
1/4 cup organic cane sugar
1 tsp cinnamon powder
1 tsp cardamom powder
WORKING THE MAGIC:
Begin by adding 1 cup of apple cider in a small saucepan. Keep the heat to medium and continue to reduce the cider until you have 1/2 cup of apple cider left. It takes about 15-20 minutes.
Allow the apple cider to cool for 10-15 minutes before using it in your recipe. Preheat your oven to 350°F after it has cooled.
Combine the apple cider, sugar, apple sauce, oil, and vanilla in a large mixing bowl & whisk everything together.
Then sift the whole wheat pastry flour, baking powder, baking soda, cinnamon, nutmeg, clove, and salt in a the same bowl over the wet ingredients. (Make sure to start with the flour and then add the rest of the ingredients on top. Then, using a fork, carefully mix in the baking powder, baking soda, and salt.)
After sifting, combine all of the ingredients in a mixing bowl and stir until a batter forms.
Spray or lightly grease the doughnut pan with oil. Then, pour the batter into the pan, being careful not to fill the holes in the middle. The batter should yield 6 to 8 doughnuts. Bake for 12-15 minutes, or until the donuts are well cooked.
Remove the donut pan from the oven and carefully invert it onto a drying rack and allow for a 10-15 minutes.
While the doughnuts cool, make the cinnamon sugar topping by combining the melted coconut oil in a small dish with the cinnamon sugar mixture in a larger shallow bowl.
Brush each doughnut very gently with the coconut oil mixture. Then, dip each doughnut into the cinnamon sugar and swirl until covered. Allow the doughnuts to settle for about 10 minutes before dunking them once again into the cinnamon sugar mixture.
