A great way to incorporate some fibrous kale into a quick meal. So tasty you’ll be eating it straight out of the pot. Definitely a must try recipe.

INGREDIENTS:
2 tbsp oil or ghee
1 tsp cumin seeds
1 bay leaf
1 small cinnamon stick
1 medium sized onion, chopped
1 green chili, chopped
2 cups kale, washed and chopped
½ cup green peas, fresh or frozen
½ tsp garam masala
½ tsp black pepper
Salt to taste
1 cup basmati rice
2 tbsp lime juice
5-6 toasted walnut halves
WORKING THE MAGIC:
Heat oil in a medium sized pan over medium high heat. Add cumin seeds, bay leaf and, cinnamon stick and sauté for 10 seconds until fragrant.
Add onions and cook them. Now add green chillies, peas, kale, black pepper, garam masala and salt to taste. Saute for good 2 minutes.
Add rice, lime juice and water (add 2 cups of water for 1 cup rice), cover with lid. Bring to gentle simmer then immediately turn heat down to low or medium low, so the liquid is simmering very gently.
Cook for 12-15 minutes until all liquid is absorbed.
Remove from heat and let it rest for 10 minutes.
Adjust salt and pepper to taste and stir through clarified butter/ghee if desired.
Transfer to serving bowl and garnish with chopped cilantro and toasted walnuts, if using.
