Mediterranean Crunchwrap Supreme with Thyme Cilantro Dip

A completely homemade and healthy version of taco bell's crunchwrap supreme but with a twist of Mediterranean flavors. Say goodbye to the long Taco Bell drive-through, and make these delicious wraps at home!

šŸ½ S E R V I N G S

2 crunch wraps


ā° T I M E

prep time - 20 minutes

cook time - 10 minutes

total time - 30 minutes

INGREDIENTS:


🌱 FOR STUFFING

3 tbsp olive oil

1 tsp ground cumin

1 tsp paprika

1 onion, diced

1 cup broccoli florets

1 lb fresh spinach, cleaned

Salt & pepper


🌱 FOR FILLING

2 cups lettuce, shredded

1-ounce burrata

1/2 cup sour cream or tzatziki

15-20 tortilla chips or pita chips

1 tbsp z'aatar seasoning


🌱 WRAPS

4 large tortilla wraps


🌱 FOR THYME CILANTRO DIP

1/2 cup greek yogurt

4 tbsp chopped fresh cilantro

2 tbsp fresh chopped thyme

1 tbsp lemon juice

1/4 tsp grated ginger

Salt & pepper


WORKING THE MAGIC:


🌱 STUFFING

  • Heat 1 tbsp oil in a pan to medium-high heat.

  • Add onion to the pan and stir for 1-2 minutes.

  • Add spinach and broccoli and cook for 2-3 minutes or until spinach has just wilted.

  • Reduce heat to medium and stir until spinach and broccoli are tender-crisp.

  • Season with ground cumin, paprika, salt & pepper, and let it cool.

🌱 THYME CILANTRO DIP

  • Blend all the ingredients in a blender until smooth & creamy and let it chill in the refrigerator before serving.

🌱 ASSEMBLY

  • Working one at a time, place the spinach & broccoli stuffing in the center of each tortilla. Top with burrata cheese, za'atar seasoning, and tortilla chips/pita chips. Spread sour cream/tzatziki in an even layer over the tostada shell; top with lettuce. Repeat with remaining tortillas.

  • Fold the edges up and over the center. Continue to work your way around the tortilla, folding as tight as possible.

  • Heat the remaining 1 tbsp olive oil in a large skillet. Place wrap seam-side down and cook until the underside is golden brown, about 2 minutes. Flip and cook wrap on the other side, about 1-2 minutes longer.

  • Serve immediately with chilled thyme cilantro sauce.
