Pluot Cream Cheese Puff Pastry Tarts | Vegan

As summer fades into fall, now is the time to stock up on your favorite fruits for one final hurrah in the kitchen. What better way to do so than with some bizarre science-experiment hybrid fruit that tastes like heaven itself?


Obviously, I'm referring to the pluot. What is it? Pluot! Consider plum and apricot. Now spin that beauty into a cardamom flavored cream cheese-filled flaky puff pastry tart, drizzle some maple syrup on top, and you've got yourself a winner.

Prep time - 10 minutes

Cook time - 20 minutes

Total time - 30 minutes

INGREDIENTS:

  • 1 sheet puff pastry

  • 6 tsp vegan cream cheese (I used Miyoko's cream cheese)

  • 1 tbsp maple syrup

  • 1/4 tsp cardamom powder

  • 1/4 cup plant milk

  • 3 pluot or choice of stone fruit(apricot, plum, peach etc)


WORKING THE MAGIC:

  1. Preheat oven to 400F.

  2. Set aside the frozen pastry to defrost. Make sure it doesn't get too soft. If necessary, return it to the refrigerator to keep it cold.

  3. Place the cream cheese, maple syrup & cardamom powder in a medium-sized mixing bowl. Beat until smooth and creamy using hand-held electric beaters or a stand mixer. Place aside.

  4. Remove the stone from the pluot and cut them in half.

  5. Using a sharp knife, cut each pluot half into 12 cm (1/8”) thin slices. Place aside.

  6. Cut 6 rectangles out of each sheet of pastry using a sharp knife.

  7. Score a smaller rectangle 1cm in from the edges of each piece of pastry with the point of a knife.

  8. Prick the pastry within the smaller rectangle with a fork.

  9. In the center, dab roughly a spoonful of the cream cheese mixture. Fill the smaller rectangles of each pastry with the filling.

  10. Place the pluot slices on top of the cream cheese mixture.

  11. Brush the plant milk along the edges of the pastries.

  12. Bake for 20 minutes, or until the edges of the crust are a gorgeous golden brown, in a preheated oven.

  13. Lift the pastries onto a cooling rack gently.

  14. Allow a few minutes for the pastry to cool before serving.
