Spiced Peach Blackberry Almond Cobbler | Vegan

The best end of summer dessert and I’m bringing this sweet, tangy, decadent & Spicy Peach Blackberry Cobbler that's caramelized on the outside & pillowy and fluffy on the inside—grab a spoon & let’s dig in!

INGREDIENTS:

  • 3 peaches, cut in thick slices

  • 1 cup fresh blackberries, washed

  • 1 tbsp lemon juice

  • 1/2 cup light brown sugar

  • 1 tsp ginger powder

  • 1 tsp ground cinnamon

  • 1 tsp cardamom powder

  • 1/4 tsp nutmeg powder

  • 1/2 cup coconut oil

  • 1/2 cup all-purpose flour

  • 1/2 cup fine almond flour

  • 1/2 cup oat flakes or rolled oats

  • 1 tbsp corn starch

  • 1/4 cup maple syrup

  • 1/2 cup coconut milk

  • 1 1/2 tsp baking powder

  • 1/4 tsp pinch salt

  • 1/4 cup slivered almonds


WORKING THE MAGIC:

  • Preheat oven to 375F.

  • Mix peach slices and washed blackberries with brown sugar, lemon juice, ginger powder, ground cinnamon, cardamom powder, nutmeg powder, and a pinch of salt and let it sit for 10-15 minutes, while we work on the batter.

  • In a medium-sized mixing bowl, combine all-purpose flour, almond flour, oat flakes, corn starch and whisk in coconut milk, maple syrup, baking powder, and salt & mix until well combined.

  • Melt the coconut oil in a pan and pour the hot oil on a baking dish.

  • Layer half of the peach and blackberry mix over the coconut oil and then pour all the batter that we prepared.

  • Layer with the remaining half of the peach and blackberries & sprinkle almond slivers on top.

  • Bake for 40-45 minutes and serve warm with frozen yogurt or vegan vanilla ice cream.
