These vegan ginger snaps are a wondrous treat to enjoy especially during the holiday season. This is due to their sparkling snow-like sugar coating and blast of ginger and cinnamon-y sweetness you get with each and every bite. YUMM!!

INGREDIENTS:
1/4 cup Vegan Butter
1 cup Coconut Sugar or Brown Sugar
1/4 cup Maple Syrup
1 tsp Vanilla Extract
1 tsp Apple Cider Vinegar
1 tbsp freshly grated ginger (optional)
2 cups All-Purpose Flour
1 tsp Baking Soda
2 tsp Ground Ginger
2 tsp Ground Cinnamon
1/4 tsp Ground Cloves
1/4 tsp freshly grated Nutmeg
1/4 tsp Salt
3-4 tbsp Non-Dairy Milk (I used Oat Milk)
1/4 cup white sugar, for rolling
WORKING THE MAGIC:
Preheat the oven to 350 F. Line 2 large baking sheets with parchment paper.
In a large bowl with a hand mixer, beat the softened vegan butter and coconut sugar together until creamy and fluffy. Add the maple syrup, vanilla extract, and apple cider vinegar, freshly grated ginger, and beat in until smooth. Scrape the sides as needed with a spatula.
Add dry ingredients to the wet and stir in by hand until crumbly.
Add 2 Tbsp non-dairy milk and mix. You should get very thick cookie dough. However, if you still have crumbles and it’s not yet sticking together then add another 1 Tbsp non-dairy milk. Only do this if you really need it though.
Fill a small bowl with a cup of white sugar for rolling.
Scoop out about 2 tablespoons of dough for large cookies (and 1 tablespoon for small cookies), roll into a ball, then roll each ball in the sugar until completely coated.
Place on the prepared baking sheets, flatten the cookie dough balls with a fork, or gently press each dough ball with the back of a bowl.
Bake the cookies for 11-15 minutes (11 for a little chew in the centers or up to 15 minutes for a totally crisp and crunchy cookie).
The cookies will be soft when they come out of the oven. Allow them to cool for 10-15 minutes and firm up directly on the tray before enjoying them.
