INGREDIENTS:
1 cup all purpose flour
1/4 cup organic granulated sugar
1/2 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/4 cup avocado oil
1/2 cup oat milk
1 tsp egg replacer + 2tsp water OR 1 flax-egg
2/3 cup hibiscus tea (mix 1 tbsp dried hibiscus flowers to 2/3 cup of boiling water)
2 tsp rose water
White Chocolate Cream Cheese Frosting:
1/4 cup white chocolate chips
4 tbsp coconut cream
1/2 cup cream cheese
1/2 tsp rose water
edible rose petals, optional (for garnish)
WORKING THE MAGIC:
Preheat oven 350F and spray a donut pan with nonstick cooking spray and set aside.
In a large mixing bowl, sift flour, baking powder and baking soda. Add sugar and salt. Mix to combine.
In separate bowl, combine avocado oil, oat milk, egg replacer, hibiscus tea and rose water.
Combine wet ingredients with dry ingredients in and mix until just combined.
Spoon the batter into the donut cavities or use a ziplock bag. Cut a corner off the bottom of the bag and pipe the batter into each donut cavity, filling 3 ∕ 4 of the way full.
Place the pan in the oven and bake for 9-10 minutes. Test readiness by inserting toothpick into donut. If it comes out clean, remove from oven and let cool for 1 minute. Loosen the edges and remove donuts from pan. Transfer donuts to wire rack to continue cooling.
White Chocolate Cream Cheese Frosting:
Mix coconut cream and white chocolate in a bowl and microwave for 45 seconds. Stir well then heat for 20 second intervals until the chocolate is completely melted, stirring each time. There shouldn't be any lumps in your white chocolate mix.
Add cream cheese and white chocolate mix to a bowl & whisk the mixture using electric mixture until smooth and fluffy. Add cardamom powder, and mix to combine.
Dip each donut into the prepared frosting, and put on parchment to set.
Garnish with edible rose petals if desire.
Enjoy!
